The Black Winter Truffle, also referred to as the “Perigord” Truffle or “Nero Pregiato” in Italy, is considered the crown jewel among black truffles. Its skin is black-brown, with small pyramidal bumps, and its flesh is white with darkening veins that turn brown over time. The white veins of the Black Winter Truffle run throughout its flesh, giving it its signature earthy aroma and rich flavor.
