Description
The Bianchetto truffle, also known as the “whitish” truffle or the spring truffle, is often compared to the white truffle. It is less expensive and can be found in the same regions as the white truffle, but its season runs later. This truffle gets its name from the Italian word “Bianchetto,” which means “whitish.”
It is less pungent and typically smaller, with a marbled flesh featuring whitish and white-reddish veins against a brown-reddish background. The surface of the truffle is smooth, with colors ranging from whitish to yellow and light brown.
Season & Habitat
January to April. Generally black pine, stone pine, maritime pine, Aleppo pine, cedar, downy oak, Turkey oak, English oak, poplar, willow.
